Brunch Flavor Without Making Alcohol the Main Event

UnDrunk Brunch is a flavor-forward class experience built around exciting nonalcoholic and low-to-no beverages, thoughtfully paired brunch bites, and practical techniques you can use at home.

We explore what makes a drink feel balanced, layered, and complete. That means looking beyond sweetness and learning how acidity, bitterness, spice, aroma, texture, temperature, and presentation work together.

This is not a consolation brunch for people who are not drinking. The drinks are allowed to have personalities.

What You’ll Learn

Through guided tasting, demonstration, and hands-on exploration, you may learn how to:

  • balance sweetness with acidity, bitterness, salt, and spice
  • build depth without relying on alcohol
  • use teas, coffee, shrubs, juices, herbs, spices, and sparkling ingredients
  • create syrups, rims, garnishes, and flavor infusions
  • understand how texture and temperature affect a drink
  • pair beverages with sweet and savory brunch foods
  • adjust a drink that tastes flat, overly sweet, thin, or unfinished
  • create drinks that work for individuals, pitchers, and gatherings
  • adapt recipes to the ingredients you already have
  • present nonalcoholic drinks with the same care given to cocktails

Who UnDrunk Brunch Is For

UnDrunk Brunch is for anyone interested in drinking differently.

That may include people who do not drink alcohol, people who are reducing their alcohol intake, designated drivers, sober and sober-curious guests, pregnant or breastfeeding guests, and anyone who simply wants a more interesting beverage than sparkling water wearing a lime as a tiny hat.

No beverage-making experience is required.

Our Approach

Our classes are welcoming, practical, and judgment-free.

We do not ask why someone is not drinking. We focus on making sure everyone has something satisfying, celebratory, and thoughtfully prepared in their glass.

Participants learn how flavor works across both beverages and food, so the techniques extend well beyond one brunch menu.

More Than a Mocktail

Removing alcohol from a drink does not automatically create a balanced beverage.

Alcohol can contribute bitterness, aroma, body, heat, and length. When it is absent, those qualities must be built intentionally through other ingredients and techniques.

UnDrunk Brunch teaches you how to replace what alcohol does, rather than simply leaving it out and hoping juice will carry the entire shift.

The goal is a drink that feels complete on its own.

What You May Taste or Make

Each UnDrunk Brunch experience can feature a different menu. Possible elements include:

  • iced coffee and tea drinks
  • sparkling citrus beverages
  • fruit and vinegar shrubs
  • savory brunch drinks
  • spice-infused syrups
  • creamy or frozen beverages
  • salt, sugar, and spice rims
  • alcohol-free versions of familiar cocktails
  • low-to-no beverage options
  • sweet and savory brunch pairings

Menus may highlight seasonal ingredients, specific flavor principles, or products from local and independent makers.

Alcohol Transparency

Each event will clearly identify whether it is:

  • completely alcohol-free, or
  • a low-to-no alcohol experience that may include optional alcohol-free spirits, products containing trace amounts of alcohol, or foods prepared with alcohol

Ingredients and alcohol content will be communicated as clearly as possible so guests can make informed decisions.

UnDrunk Brunch is an educational and social experience. It is not a recovery program, and it should not be presented as appropriate for every person in recovery without considering their individual needs and boundaries.
