Ingredients:

  • 1/2 cup finely chopped fresh parsley
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1 1/2 cups diced bell peppers (assorted colors)
  • 1 cup diced radishes
  • 1/2 cup diced red onion
  • 1 cup cubed feta cheese

Dressing:

  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon Za'atar (or substitute dried oregano, thyme, or both)
  • Sea salt and fresh cracked black pepper to taste
